Spicy Thai Red Curry Chicken Recipe

Sometimes I can be all “noodled” out. Today was one of those days. So, I decided to make a very minimalistic version of a common dish in my mom’s repertoire sans noodles and all the fancy stuff.

This is my adaptation to my mom’s delicious Ka-Poon or red curry chicken stew. It’s actually a Vietnamese traditional dish served over rice vermicelli noodles garnished with cabbage slaw and cilantro.

DIY Wooden Growth Chart Ruler

This is another one of those DIY statement piece projects that has longevity, is totally functional and packs a lot of visual punch! We decided to hang it in our LO’s nursery but I have also seen them hung in the hallway for the whole family to share! I had some left over wood from my DIY Harvest Table so, making this wooden growth chart ruler was a no brainer! (especially since there is no cutting involved and I had left over stain) It can be personalized and decorated to match the decor of the nursery or room you choose to display it in. To continue with our neutral coloured nursery theme, we chose a dark stain that matched the original wood floors.

This won’t break the bank either! One plank of pine costs $7 or less and I used some left over stain from another DIY project.

3 must see new mom movies!

Prior to becoming a BrandNewMom and having my little guy, I’d watch movies involving young families but couldn’t truly relate. I mean how could I without having yet walked the walk? I could definitely empathize to a certain degree but parenting is just one of those things in life you have to experience first hand to really “get”. (Even then, some things remain a mystery! Like sleep! LOL) I digress.

Quick & Easy Congee for your Cold!

Every Sunday we go to my parents house to fellowship and have a Bible study. Upon arrival, in lieu of a traditional, “hello how are you doing?”, they are more likely to ask if we have had something to eat. Let’s face it, everyone is happier on a full tummy and nobody wants to be around anyone who is hangry.
For breakfast/brunch, my parents often make our favourite chicken congee (kao peak). It really is the Asian version of chicken noodle soup. The fresh Asian ingredients give it a little more zing and additional health benefits. It’s especially a great  go-to soup for when you feel a cold coming on!
